Ending up with a mountain of soft and hard plastic after every grocery shop is unnecessary and grinds my gears. Unfortunately, compostable packaging does not keep cut microgreens fresh for very long. Packaging the greens still growing in compostable packaging has two big benefits: they can be harvested and eaten immediately at their nutritious best, and they don’t need to be encased in plastic.
Harvest and Storage
If you’d prefer to harvest and store them, simply cut them above the soil line and keep refrigerated in a sealed container (e.g. some Tupperware).
Keep Them Growing
Remove from the packaging and place on a plate on a windowsill, keeping the soil moist with a little water.
